
Blueberry
Nut Bread
- 1 1/4 cups blueberries, fresh or frozen

- 1 cup whole wheat pastry flour
- 1 cup unbleached white flour
- 1/4 tsp. salt
- 1 1/2 tsps. baking powder
- 1/2 tsp. baking soda
- 1 egg
- 3/4 cup honey
- 2 tbsp. butter, melted.
- 3/4 cup orange juice
- 2 tbsp. grated orange peel
- 1 cup chopped walnuts
Butter and flour 9 x 5" loaf pan. Wash berries and dry well.
Preheat oven to 350 degrees. Mix flours in bowl.
Remove 1 tsp. flour and toss with berries.
Add salt, baking powder and soda to remaining flour.
In large bowl with an electric mixer, beat egg and honey, then
beat in butter and orange juice.
On low speed, add dry ingredients. Remove mixer.
Fold in orange peel, nuts and blueberries.
Pour batter into loaf pan. Bake 1 hour until toothpick comes out dry.
Bread will crack on top, showing off its berries.
Let cool 10 minutes in pan, but no longer, and remove from pan
after loosening the edges with a knife.
